Ingredients :

1/2 pitaya / red dragon fruit

1 cup plantbased milk (this recipe using hazelnut milk)

1 cup all purpose flour

1 tbsp baking powder

1 tbsp castor sugar

A pinch of salt

1 tsp Herbilogy Rosella extract powder

1 tbsp coconut oil or more for frying (depends on the size of the pan)

 

Directions :

Wet ingredients - Blend red dragon fruit & hazelnut milk, set aside

Dry ingredients - In a mixing bowl, put the rest of ingredients except coconut oil

Whisk gently the dry ingredients with the wet one. Don’t whisk too much, it can make the pancakes heavy & not fluffy. Once done, set aside for approximately 5 minutes

Prepare the pan, spread the surface of the pan with coconut oil (heat over medium low heat)

Pour the batter into the pan once hot. If you already see bubbles (take about 3 to 4 minutes) & are done around the edges, flip over. Repeat for the rest batter

Garnish with desired toppings
