No Bake Rosella Brownie

Ingredients:
2 cups almond meal
4 cups baked or boiled sweet potatoes (about 3 medium sized) keep 1 cup aside for marble effect
1/2 walnuts, chopped + extra for topping
1/2 cup raw cacao powder
2 tbsp rosella powder
2 tbsp cacao nibs (optional)
1/2 cup dates, pitted
1/4 tsp sea salt
Sprinkle of course sea salt on top

Instructions:
-In a food processor place the almond meal and cacao powder, rosella powder and sea salt and pulse to combine. Remove and set aside.
-Add sweet potatoes and dates in the food processor and pulse until well combined and smooth.
-Keep 1 cup aside and leave remaining mixture in the processor.
-Add the almond meal cacao mixture to the food processor and pulse again until well combined.
-Add the chopped walnuts and cacao nibs.
-Process until a dough consistency is reached.
-Add the brownie mixture to a parchment lined 20 x 20 cm square dish and press the mixture down and to the sides.
-Add the remaining 1 cup on top and mix it to create a marble effect.
Sprinkle the extra chopped walnuts and a sprinkle of course sea salt.
-Place the dish in the freezer to chill for at least 2 hours to firm up.
-Cut into 9 square pieces.
-Wrap separately for on the go or keep it as it is.
-Enjoy!
