Fenugreek Vegan Pesto

Ingredients:

2 cups fresh basil leaves

1 cup coriander (replace with basil if you don’t like coriander)

1/2 cup fresh mint leaves

1/2 cup nutritional yeast

1/4 cup pine nuts (replace with other nuts on hand)

2 garlic cloves

1/2 lemon, juiced

1/2 tsp fenugreek powder 

1/2 tsp sea salt ( nutritional yeast is less salty than usual Parmesan or Pecorino cheese, so will need 1/2 tsp salt. If you are using Parmesan than only add 1/4 tsp of salt)

1/4 cup water

 

Instructions:

Blend all ingredients in a food processor or high speeds blender

Blend until smooth and transfer to a glass jar with lid

Perfect on toast, through pasta, risotto, burger buns. 

You can also mix it into hummus or with mayonnaise as a spread :)
